Shiitake (Lentinula edodes)
   Shiitake (pronounced shee-tah-kay) is the most well-known of all specialty mushrooms and boasts the oldest written history of any cultivated mushroom. It is our favorite mushroom for day-to-day use, and the most popular variety we grow. Shiitake imparts a sweet, earthy flavor that lends itself readily to stir-fry, soup, sushi, pasta dishes, or on top of steak, salmon or chicken breast. Large caps can be marinated or lightly basted on the gills for barbecue or grilling. Shiitake is one of the most well-documented medicinal mushrooms used in Traditional Chinese Medicine and is prescribed for conditions ranging from cancer to high cholesterol to impotence. Recent studies suggest that Shiitake may have therapeutic action against viruses such as HIV/AIDS and herpes simplex virus.* This mushroom is not only packed full of health-stimulating properties, its delicious to boot!

King Trumpet Mushroom (Pleurotus eryngii)
   The King Trumpet is a delightfully firm textured mushroom that imparts a toasted nutty flavor upon cooking. With a protein content of 30% by dry weight, cholesterol-reducing properties, and high vitamin & mineral content, the King Trumpet is a healthy and substantial addition to any meal.* The versatile flavor and texture of this mushrooms lends itself easily to dishes containing grilled vegetables, red meats, pork, salmon or white fish. While it compliments gourmet foods nicely, the King Trumpet can easily stand on its own as the focus of a meal.

Lion's Mane Mushroom (Hericium erinaceus)
   The Lion's Mane or "Bear's Head" is a revered mushroom that is as unique in appearance as it is in flavor. When cooked in butter with garlic or shallots many compare its flavor and texture to that of lobster or crab. While comparisons are made by all who try this mushroom, the experience is truly one of a kind. 40% protein by dry weight makes for a filling, hearty meal that needs no meat companion however the Lion's Mane does compliment white meats, fish and shellfish exceptionally. Studies being conducted around the world highlight the tumor-fighting, anti-cancer and immune-boosting properties of Lion's Mane, making it not only a gourmet food but a medicinal delight as well!*

This is why we call our wild mushrooms "Cascadia's Finest Non-Timber Forest Products".
   The wild mushrooms we offer are ethically harvested, meaning that we only buy mushrooms from experienced pickers who understand quality standards and don't harvest every mushroom they see. To ensure future harvests and the health of Cascadia's forest ecosystems the wild gourmet mushrooms and their habitats must be treated with the highest respect and humility.
